Ingredients
- 1 whole wheat Pita
- 3/4 Lb Extra Lean Beef
- 1/2 Onion chopped
- 1/2 Zucchini Cubed
- 1/2 Tomato Cubed
- 1 12 oz can Whole Kernel Corn, no salt added
- 2 Tablespoons Salsa
- 1 Clove garlic chopped
- 1 teaspoon Paprika sweet or hot
- Fresh Crushed Black Pepper to taste
Preparation
Step 1
Spray a non-stick pan with PAM and turn stove to med-high. In pan, begin to brown beef and drain any fat that may be produced by the beef. If you get a good quality beef, you should have no fat to drain. When beef is almost done, Combine corn with beef in nonstick pan. add garlic, tomato, zucchini, onion and fresh basil and combine fully. Add paprika, black pepper and salsa and continue until all is fully incorporated.
When beef is almost done, cut the pita in half and put on a pizza pan under the broiler in your oven and brown until crisp. Turn over pita and brown other side till it is crispy. Be careful not to leave the pita in too long, as it will burn quickly once it has reached a crispy state.
