You can substitute the chocolate chips and coconut with 1 cup of raisins.

Ingredients

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1 cup oatmeal
  • 3/4 teaspoon baking soda
  • 1 cup chocolate chips
  • 1 cup coconut (optional)

Preparation

Step 1

Preheat oven to 350 degrees. Cream butter and sugar. Add egg; beat well. Add cinnamon and vanilla. Mix the rest of the ingredients in and bake for 12 minutes. Yield: 2 1/2 dozen.
