Risotto

Ingredients

  • 1 cup uncooked arboreal rice
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 3 cups chicken broth

Preparation

Step 1

Sauté onion in olive oil and butter for three minutes.
Add rice and sauté for another two minutes.
Add 1 cup of broth at a time -- only adding more when all other is absorbed.
When all liquid is absorbed, fluff with a fork and salt and pepper as needed.
