Roasted Garlic Potatoes

Ingredients

  • 1 3/4 lb baking potatoes, peeled and cut into 1" cubes
  • 3 T. lemon juice
  • 1 t. olive oil
  • 1/2 t. kosher salt
  • 4 garlic cloves, minced

Preparation

Step 1

Preheat oven to 425* Combine all ingredients in medium bowl; toss well to coat. Let stand 10 minutes. Spoon into 11X7 inch baking dish coated with cooking spray. Bake 425* for 35 minutes or until tender and lightly browned, stirring occasionally.
