Ingredients

  • 1 1/2 cup shortening
  • 2 cups creamy peanut butter
  • 2/3 cup granulated sugar
  • 2/3 cup packed dark brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all purpose flour
  • 2 teaspoons baking soda
  • For ice cream sandwiches add 1 cup chopped peanuts and hot fudge

Preparation

Step 1

Preheat oven to 375 F
In a medium-sized bowl, stir together flour and baking soda. Set aside.
In a separate bowl, cream shortening and peanut butter in a large bowl until well blended
Add granulated sugar and brown sugar. Beat until fluffy
Add eggs and vanilla. Beat until creamy
Gradually add flour mixture, scraping sides of bowl as you mix
Divide dough into two even amounts.
Press dough evenly onto ungreased cookie sheet in a rectangular shape approximately ⅛ inch thick
Bake 8 to 10 minutes, or until lightly browned
