Ingredients
- 2 3/4 C. flour
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1/8 tsp. salt
- 1/4 tsp. ground ginger
- 2/3 C. fresh orange juice
- 1 T. grated orange rind
- 1/2 tsp. vanilla
- 1/2 tsp. almond extract
- 1/2 C. unsalted butter
- 1 C. sugar
- 2 lightly beaten eggs
- Whipped cream
- Fresh fruit
- Powdered sugar
Preparation
Step 1
1. Preheat oven to 350°. Butter the inside of a 9" cake pan and fit a piece of buttered waxed paper in the bottom; lightly flour.
2. Sift together flour, baking powder, baking soda, salt and ground ginger; set aside.
3. Combine orange juice, grated orange rind, vanilla and almond extract; set aside.
4. At high speed in an electric mixer, cream unsalted butter and sugar until light. Add eggs a little at a time and beat until mixture is smooth and doubled in volume.
5. Fold in 1/3 of dry mixture then 1/3 of the liquid. Continue to add flour alternately with juice. Pour into the prepared pan and bake 30 min. until center tests done.
6. Remove and let rest in pan for 3-4 minutes. Unmold on a cake rack. Allow to cool.
7. Split cake in half horizontally and fill center with whipped cream and sliced fresh fruit. Dust top with powdered sugar. Serve immediately.
