Ingredients
- 2 C. flour
- 1/4 C. sugar
- 1 T. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 C. butter
- 1/2 C. buttermilk
- 1 tsp. grated lemon peel
- 2 eggs (divided)
- 2 pints fresh strawberries, stemmed and sliced
- 1 C. heavy cream, whipped and sweetened
Preparation
Step 1
1. Preheat oven to 450° F.
2. Grease a baking sheet. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles coarse meal. In small bowl, blend buttermilk, lemon peel, 1 whole egg and 1 egg yolk (save white). Stir into flour mixture to make a soft dough.
3. Divide dough into 6 equal portions. On floured board, pat each into a 3 inch circle. Place on greased baking sheet. Beat remaining egg white and brush it generously on each shortcake. Sprinkle each with a bit of sugar.
4. Bake 10-12 minutes, until golden. Remove from pan and cool on rack.
5. Sweeten strawberries to taste. Slice each shortcake in half horizontally with a sharp knife. Fill and garnish with strawberries and whipped cream.
