Ingredients

  • 1 boneless beef chuck roast (about 3 pounds)
  • 2 large garlic cloves, sliced
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup olive oil
  • 1 1/2 cups red wine
  • 1 onion, sliced
  • 1 can tomato sauce (8-ounce)
  • 1 tablespoon brown sugar
  • 1 teaspoon oregano
  • 1 teaspoon prepared horseradish
  • 1 teaspoon prepared mustard
  • 1 bay leaf
  • 8 small red potatoes
  • 8 carrots, peeled and quartered
  • 3 ribs celery

Cut the roast into halves and make small slits in the top of each half.
