CHOCOLATE CAKE - MOUSSE WITH CHOCOLATE CURLS

Fast cake since it uses already prepared chocolate cake

Ingredients

  • CHOCOLATE MOUSSE:
  • 8 " chocolate cake, homemade or from
  • bakery, sliced in half horizontally
  • 2 C. heavy cream, whipped to stiff peaks
  • 1 C. dark chocolate melted until warm, not hot
  • BUTTER CREAM FROSTING:
  • 1/2 lb. butter
  • 1 lb. confectioners sugar
  • l/8 tsp. salt
  • 3 T. cocoa powder
  • 1 T. vanilla extract
  • 1 T. heavy cream
  • CHOCOLATE GARNISH:
  • 8 oz. dark chocolate

Preparation

Step 1

For Butter Cream Frosting:
1. In bowl of electric mixer, cream butter until light and fluffy. Slowly add remaining ingredients, beating on high until frosting becomes fluffy and stiff.

For Chocolate Mousse:
2. Slowly drizzle chocolate into whipped cream, stirring until completely smooth. Refrigerate until ready to use.

For Dark Chocolate Garnish:
3. Melt chocolate until warm, not hot. With spatula, spread evenly and thinly onto piece of parchment. Let stand until hardened. Dip knife in hot water and dry. Cut chocolate into desired shapes for top and sides of cake: Set aside.

For Cake Assembly:
4. Spread mousse over bottom layer of cake; top with remaining half. Cover entire cake with frosting. Garnish attractively with prepared chocolate pieces and dusting of powdered sugar. Optional garnish: surround with white-chocolate-dipped cherries.
