Ingredients
- 2 Tbsp EVOO
- 1 cup sliced shiitake
- 1 cup sliced cremini
- 1 tsp dried Italian herbs
- salt and pep
- 2 thin slices onion
- 2 5in pieces French brad, sliced open
- 4 strips roasted red pep from a jar, drained
- 10 arugula leaves

Preparation
Step 1
In a skillet over med-high heat, heat oil. Add shrooms, saute until soft and browned. Sprinkle with herbs, salt and pep. Place onion on bottom of bread, top with 1/2 mush mix, 2 red pep and 5 arugula leaves. Top with remaining bread.
