SOYA MUFFINS

My grandmother used to make these for my grandfather who was always interested in pursuing healthy food. These muffins are light and delicious.

Ingredients

  • 1 cup soy flour
  • 1/2 cup oat flour or 1 cup whole wheat flour
  • 1 tsp. salt
  • 1 Tbsp. baking powder
  • 3 Tbsp. brown sugar
  • 2 eggs
  • 1/4 cup safflower oil (may use other oils)
  • 1 1/2 cups milk

Preparation

Step 1

Sift dry ingredients together. Beat 2 eggs; add milk and oil. Add liquid ingredients to dry ingredients. Mix until blended. Portion batter into muffin tin. Bake in 350 degree F. oven for 25-30 minutes or until brown.
