Leafy Lentil Salad

Ingredients

  • For the Dressing:
  • 1 cup dry brown or green lentils, rinsed
  • 4 cups water
  • 1 head romaine lettuce, chopped
  • 1 head red leaf lettuce, chopped
  • 1/2 small red onion, finely chopped
  • 2 cups ripe chopped nectarine, peach or mango
  • 1/2 cup fresh squeezed orange juice
  • 2 tablespoons balsamic vinegar
  • 1/4 cup raw almonds
  • 1/4 cup raisins
  • 1 clove garlic

Preparation

Step 1

Bring lentils and water to a boil, cover, reduce heat and simmer until lentils are tender but not mushy, about 20 to 25 minutes, stirring occasionally. Drain.

In a large mixing bowl, toss together the lettuce, fruit, red onion and lentils.

To make dressing, blend remaining ingredients in a high-powered blender until smooth and creamy.

Toss salad with desired amount of dressing.
