BUNDT CAKE - CANDIED PINEAPPLE CROWN

Ingredients

  • CAKE:
  • 1 C. margarine
  • 1 C. sugar
  • 1 1/2 tsp. vanilla sugar
  • 5 T. cocoa
  • 4 eggs
  • 2 1/2 C. flour
  • 10 T. cornstarch
  • 2 level tsp. baking powder
  • 8 oz. candied pineapple
  • FROSTING:
  • 8 oz. bitter-sweet chocolate glaze
  • DECORATION:
  • 4.37 oz. heavy cream
  • Candied pineapple

Preparation

Step 1

1. Preheat oven to 350°F.

2. Beat margarine until light and slowly add sugar and vanilla sugar. Add eggs one at a time, beating after each. Add dry ingredients and blend into mixture. Beat until smooth.

3. Fill 1/3 of the dough into a greased bundt form pan and top with half the chopped pineapple. Add another 1/3 of the dough, then the remaining pineapple. Top with the final layer of dough.

4. Bake as follows: Gas oven: marks 4
Baking time: 50-60minutes

5. After cake has cooled, melt frosting over hot water and frost cake with it.

6. When frosting is dry, decorate the cake with whipped cream rosettes and pineapple pieces.
