Ingredients

- 6 chicken thighs, with bone and skin 18 36 54
- 1/2 c extra virgin olive oil 1 1/2c 3c 4 1/2c
- 3 T balsamic vinegar 1/2c 1c 1 1/2c
- 2 garlic cloves, pressed 6 12 18
- 1/2 t salt 1 1/2t 1T 4 1/2t
- 1/4 t pepper 3/4t 1 1/2t 21/4t

COOKING DAY:
Mix oil, vinegar, garlic, salt, and pepper in small bowl. Transfer marinade to a large freezer bag. Add chicken to bag, turning to coat thoroughly. Freeze, using freezer bag method.
SERVING DAY:
Thaw chicken completely. Place chicken, skin side up and well coated with marinade, into rimmed baking pan or dish. Roast uncovered in a 350 degree oven until brown and cooked ghrough, about 35-40 minutes. Chicken may also be grilled over medium-hot coals until cooked ghrough, turning once. Serve with salad, otmatoes, and cheese biscuits
SERVING SUGGESTIONS:
If desired, you may substitute chicken breasts in this recipe. With breasts, you may also remove chicken from bone after cooking, slice and use to top a salad. Make fresh marinade to use as salad dresing if desired.
