Black Bean Chili

Ingredients
- 4 cans (15 oz each) black beans, rinsed & drained, & divided
- 1 can chix broth
- 1 small onion chopped
- 1 stalk celery, thinly sliced
- 1/3 c copped green pepper
- 2 cloves garlic, minced
- 2 t olive oil
- 1 can (14.5 oz) diced tomatoes
- 2 t chili powder
- 1/2 ground cumin
- 1/2 dried oregano
- salt & pepper
- 1/2 c chopped tomato
- 1/2 sliced green onions
- 2 T plus 2t plain low fat yogurt

Preparation
Step 1
1. place 3 cups beans & the broth in a blender. Process until smooth. set aside.
2.Combine onion, celery, pepper & garlic in oil. Saute over medium heat for 8 to 10 minutes or untl veggies are tender. Add processed beans, remaining beans,canned tomatoes, chili powder, cumin,oregano , salt & pepper. Mix well.
3.Bring to a boil over high heat. stirring occassionally. Reduce heat to low. Cook for 10-15 minutes or until cili is hot and flavors are blended, stirring .
garnish each bowl with chopped tomato, green onion and yogurt
