Coconut Shrimp Curry

Ingredients

  • 1 cup rice
  • 1 can unsweetened lite coconut milk
  • 1 tbsp red curry paste
  • 1 large red pepper
  • 1 small onion, thinly sliced
  • 4 tsp soya sauce
  • 1 1/4 lbs shrimp

Preparation

Step 1

1. Cook rice and set aside
2. In a medium saucepan combine 1 cup of the coconut milk and curry paste and bring to a simmer over medium high heat. Add pepper and onion stirring often, for 5 minutes.
3. Stir in soya sauce and remaining coconut milk. Bring to a simmer for one minute.
4. Add shrimp and cook, stirring often, for about 5 minutes.
