Ingredients
- • 3 Tbsp Sugar
- • 2 Tbsp Corn Starch, or Tapioca Starch
- • 2 tsp Cinnamon
- • 1/4 tsp Cayenne Pepper (makes it spicy, so optional if you don’t want Mexican flavored)
- • 2 cups Dairy free milk, cold
- • 3/4 cup Enjoy Life Foods semi-sweet mini chips or dark morsels
- • 1 tsp Vanilla Extract
- * 8 oz Cool Whip
- * Raspberries
Preparation
Step 1
1. In a small saucepan, combine sugar, corn starch, cinnamon and cayenne pepper.
2. Add cold milk and stir until smooth.
3. Cook over medium heat until mixture comes to a boil, stirring constantly.
4. Once boiling, cook for another minute or until it starts to thicken.
5. Stir in chocolate mini chips or morsels- stir til smooth.
6.Remove from heat.
7. Add vanilla and whisk until fully incorporated
8. Spoon pudding into dessert dishes or bowl and refrigerate.
9. Top with dairy free whipped topping and sprinkle with cinnamon
10. Top with raspberries.
