- 1 lb chicken (skinless, boneless) - I used chicken tenders (they were on sale at Meijer)
- 1 small onion
- 1 green pepper (I also put in some red and orange pieces I had)
- 3 or 4 Roma tomatoes
- 1 package Meijer brand fajita mix.
I sprinkled a little rotisserie seasoning on the chicken pieces and then browned them in a couple of tablespoons of vegetable oil.
Remove chicken and set aside.
cut onion, peppers and tomatoes into bite size pieces or strips
cook onion until transparent then add the peppers and tomatoes ( I like the peppers a little crunchy)
Return chicken to pan.
Mix fajita seasoning as directed on package.
Pour evenly over chicken and veggies. The liquid will thicken as it comes to a boil.
Serve over chips.
Options: Add shredded cheese, sour cream, jalapenos
