Ingredients

  • 2 TBSP EVOO
  • 1 cup finely chopped onion
  • 1/2 cup finely chopped carrot
  • 1/2 cup finely chopped celery
  • 2 tsp kosher salt
  • 1 pound lentils, picked and rinsed
  • 1 cup peeled and chopped tomatoes
  • 2 Q of chicken or veg broth
  • 1/2 tsp fresh ground coriander
  • 1/2 tsp fresh ground toasted cumin
  • 1/2 tsp fresh ground grains of paradise

Preparation

Step 1

Place EVOO into large pot, med-high heat. Once hot, add onion, carrot, celery, salt and sweat til translucent 6-7 mins.

Add lentils, tomatoes, broth, coriander, cumin and grains of paradise. Increase heat to high and bring to a boil.

Reduce heat to low, cover ad cook at low simmer til tender, 35-40 mins.
