Gazpacho Soup

Gazpacho soup was made for the summer. Refreshingly cold on hot summer days, this classic Spanish cold soup deliciously combines summer's best vegetables.

Ingredients
- Blend the following ingredients in a blender until smooth.
- 1/2 cup water
- 1/2 cup extra virgin olive oil
- 5 large ripe tomatoes
- 2 cloves garlic or spicy pepper to taste
- 1 Tbs. raw honey (dates or raisings work just as well)
- 1/4 cup lemon juice
- 1 tsp. sea salt
- 1 bunch of fresh basil
- Now that you have the gazpacho liquid, cut the following vegetables into 1/2 inch cubes.
- 1 large avocado
- 1 medium bell pepper
- 5 sticks celery
- 1 small onion

Mix all ingredients in a bowl and sprinkle with chopped parsley.
