Shrimp and Squash Kebabs

Ingredients

  • 1 lb. peeled fresh medium shrimp
  • 6-8 summer squash
  • 1/2 cup olive oil
  • 2 tbs. Aceto Balsamico
  • 2 chopped cloves of garlic
  • 1 Tbs. fresh dill or 2 tbs. dried
  • Salt and pepper
  • 8 medium mushrooms
  • 1 medium Bermuda onion

Step 1

Soak 1 l. peeled fresh medium shrimp in lightly salted water for 20 min. drain and pat dry. Blanch 6-8 summer squash, halved or quartered (depending on size). Whisk together 1/2 cup olive oil, 2 tbs. Aceto Balsamico, 2 chopped cloves of garlic, 1 Tbs. fresh dill or 2 tbs. dried, and salt and pepper. Toss shrimp in mixture, let stand for 10 min. Arrange shrimp and squash on skewers along with 8 medium mushrooms and 1 medium Bermuda onion, cubed. Brush with the marinade and cook on a barbecue or under a broiler, basting several times. Serve with rice.
