COQUILLE ST. JACQUES

Ingredients

  • . 1 1/2 pounds scallops
  • ∙ 1 pound fresh mushrooms
  • ∙ 3-4 green onions
  • ∙ 1 carton heavy cream (or at least half & half)
  • ∙ 3/4 cup wine
  • ∙ garlic (fresh or powder)
  • ∙ 1 stick butter
  • ∙ 2 tablespoons flour
  • ∙ 3/4 cup parmesan cheese
  • ∙ salt and pepper

Preparation

Step 1





Melt butter in skillet. Add fresh garlic or garlic powder to taste. Clean and slice mushrooms into butter. Simmer for about 5 minutes. Add chopped green onions and washed and drained scallops. Cook slowly for 10 minutes. Add wine and cook for 5 more minutes.

Mix cream, flour, cheese and salt and pepper very well. Add to skillet, stirring constantly until thickened. Pour into (the ultimate is shell dishes) individual ovenproof serving dishes and place on a cookie sheet. Just before serving, sprinkle with parmesan cheese (fresh is best) and place under broiler for just a couple minutes. Check constantly. When slightly browned, serve immediately.
