Ingredients
- 1/2 pound diced seasoned country sausage
- 2 tablespoons vegetable oil
- 1/2 cup chopped green onions
- 2 cloves garlic, chopped
- 1/2 cup chopped green pepper
- 1/2 cup fresh parsley
- 1 cup canned tomatoes
- 1 bay leaf
- 1 teaspoon Crushed thyme
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 cup long grain rice, uncooked
- 1/2 cup water
- 2 pounds fresh jumbo shrimp, peeled
Preparation
Step 1
In a large skillet or kettle saute sausage in oil 3-4 minutes. Add onions, garlic, and green pepper. Cook until tender. Add parsley tomatoes, bay leaf, thyme, pepper, salt rice and water. Bring to a boil. Add shrimp. Reduce heat to simmer. Cook for 25-30 minutes without stirring. Remove bay leaf. Serve hot.
