Beefed Up Short Ribs

  • 4

Ingredients

  • 4 pounds lean beef short ribs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (8-ounce) can tomato sauce
  • 1/2 cup finely chopped celery
  • 1/4 cup finely chopped onion
  • 2 tablespoons brown sugar
  • 1 clove garlic, minced
  • 1/8 teaspoon ground red pepper
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons lemon juice
  • 2 tablespoons prepared mustard

Preparation

Step 1

Preheat oven to 475 degrees. Trim excess fat from ribs; sprinkle with salt and pepper. Place ribs on lightly greased rack in broiler pan. Bake at 475 degrees for 30 minutes. Place ribs in lightly greased 4-quart slow cooker.

Whisk together tomato sauce and next 8 ingredients in small bowl; pour over ribs.

Cover and cook on LOW setting 9 hours. Skim excess fat from ribs before serving.

Notes:
These beef short ribs cook slow, and are they ever easy and lip-smackin' good! I bake 'em first to bring out their flavor. Degrease the flavorful juices left in the slow cooker and enjoy the home-cooked goodness of those juices over mashed potatoes or rice.
