Wonton Soup

Ingredients
- SOUP:
- 1 tbsp. sesame oil
- 1/2 c. fresh spinach, chopped
- 1/2 c. carrots, shredded
- 1/2 c. fresh mushrooms, chopped
- 1 sm. zucchini, chopped
- 1/4 sm. onion, chopped
- 1 tbsp. soy sauce
- 1/4 tsp. dry mustard
- 1/4 tsp. fresh ground pepper
- 1/4 tsp. garlic powder
- 1 pkg. wonton skins
- 4 c. chicken stock
- 2 c. beef stock
- 1 tsp. soy sauce
- 3 gr. onions, chopped
- 1 c. fresh spinach

Step 1
Pour oil in wok and set to sear. Add spinach, carrots, mushrooms, zucchini and onions to wok; cook 3 mins. Add soy sauce, mustard, pepper, and garlic to wok; mix well. Remove veggie mix from wok and let cool. Add chicken and beef stock to wok and let simmer. Place each wonton skin on a flat surface w/ one corner toward you like a diamond. Place 1 tsp. of veggie mix in the center of each wonton. Moisten the wonton edges w/ water and fold one corner over to form a triangle; press to seal. Bring the two points to the center of the wonton and press down with moist fingers. Gently add all the wontons to wok; 1 at a time, cook 3 mins. Add soy sauce, green onions, and spinach; cook 1 min. and serve.
