CHOCOLATE MINT BROWNIES

Ingredients

  • Brownie base:
  • ∙ 2 ounces unsweetened chocolate
  • ∙ 1/2 cup butter
  • ∙ 2 eggs
  • ∙ 1 cup sugar
  • ∙ 1/2 cup flour
  • ∙ 1/2 cup chopped pecans (optional)
  • Mint cream:
  • ∙ 1 1/2 cups powdered sugar
  • ∙ 3 tablespoons butter
  • ∙ 2 tablespoons light cream (or milk) and
  • ∙ 3/4 tsp. Peppermint extract
  • Chocolate Glaze:
  • . 2 ounces unsweetened chocolate (can use chocolate chips)
  • ∙ 2 tablespoons butter

Preparation

Step 1

Brownie base:

Melt chocolate and butter together. In bowl, beat eggs and sugar together. Add flour, nuts and chocolate-butter mixture. Bake in greased and floured 9 inch square pan at 350* for 25 minutes. Let cool.

Mint Cream:

Beat together all ingredients for cream until smooth. Spread mint cream over brownies; cover and chill until firm (about one hour).

Chocolate Glaze:

Melt ingredients for chocolate glaze together over hot water. Drizzle over top of mint cream and spread. Cool and cut into bars or squares.
