Ingredients
- 6 tablespoons butter
- 1/2 medium onion, chopped
- 2 cloves garlic, chopped
- 1/4 cup tomato juice
- 2 cups dry red wine
- 1 cup chicken broth
- Salt and freshly ground pepper
Preparation
Step 1
In a small saute pan, melt 2 tablespoons of the butter and saute the onion and garlic in it until they soften, about 3 minutes. Add the tomato juice and red wine and boil the mixture gently until it reduces in volume to 1/2 cup. Pour in the chicken broth and boil the mixture until it reduces to 3/4 cup. Strain the mixture into a clean pan. Finish the sauce by whisking in the remaining 4 tablespoons butter and season to taste with salt and pepper. Keep the sauce warm.
