Quinoa and Mango Salad

  • 1.5 Cup uncooked Quinoa, scallions thinly sliced
  • 2 large mangoes
  • 1 Jalapeno Chile, Seeded and diced
  • 1/2 cup Almonds, toasted
  • Curry Vinaigrette
  • 1 Garlic Clove Minced
  • 1 1/2 TBS Fresh lemon juice
  • salt and pepper to taste
  • 5 TBS olive oil
  • 2 tbs greek yogurt
  • 2 tsp curry powder
  • Chopped Cilantro



Step 1

Bring 3 cups water to a boil in a saucepan, the add 1/2 tsp salt and the quinoa. Lower heat to cover , and simmer until the quinoa is tender, 12 - 15 minutes.

Cut the Mangoes into bite size pieces Toss the quinoa with the mangoes and the jalapeno, scallions, and the vinaigrette. Chop the almonds and add them last so that they'' stay crisp. Combine vinaigrette ingred. let set about 15 min. and toss with salad
