SAUCE - EASY BLENDER BLUEBERRY

Ingredients

  • 3 C. fresh blueberries
  • 3/4 C. sugar
  • 1 T. lemon juice
  • Fresh cut-up fruit, cake slices and
  • whipped cream (optional)

Preparation

Step 1

1. In a food processor or blender, combine blueberries, sugar and lemon juice. Cover and process or blend for 15 seconds. Stop the machine and scrape sides with spatula. Process the mixture for 2 1/2 to 3 minutes more or till the blueberry skins are almost smooth.

2. Serve the sauce over pancakes or as an ice cream topping. Cover and store in refrigerator for up to 3 days; bring to room temperature and stir before serving. If you like, spoon over fresh fruit and cake slices topped with whipped cream.
