BURNT CREAM - VANILLA

Ingredients

  • 2 C. heavy cream
  • 1/2 C. plus 8 tsp. sugar
  • 1/2 vanilla bean, split
  • 4 eggs

Preparation

Step 1

1. Heat oven to 250°F. Boil water.

2. Heat heavy cream, 1/2 C. sugar and vanilla in pan until simmering.

3. In medium bowl whisk eggs. Scrape vanilla seeds into cream. Slowly whisk 1/2 C. cream mixture into eggs. Keep whisking as you pour remainder into eggs. Strain liquid.

4. Place eight 4 oz. ramekins in large baking dish. Evenly divide mixture into cups. Pour hot water into baking dish three-quarters of the way up the cups. Bake in bottom of oven 60 to 75 minutes until sides are firm but middle is soft.

5. Cool on wire rack, then chill. Heat broiler. Sprinkle remaining sugar over. Place under broiler until sugar has caramelized, about 1 minute. Serve at once.
