Ingredients
- SAUCE:
- 4-5 pound brisket
- liquid smoke
- onion salt
- garlic salt
- salt
- pepper
- paprika
- meat tenderizer
- 2 TB brown sugar
- 1 TB dry mustard
- 2 tsp vinegar
- Skimmed drippings
- 1/2 cup ketchup
- 1/4 cup bbq sauce
- several dashes of wine vinegar

Preparation
Step 1
Brush liquid smoke on all sides, let stand ½ hour. Season with onion salt, garlic salt, salt, pepper, paprika and meat tenderizer on lean side. Bake at 300̊ for 1 hour with fat side under. Turn over, season as before and bake 2 more hours.
Mix paste of 2 tablespoons brown sugar, 1 tablespoon dry mustard and 2 teaspoons vinegar. Spread on brisket with lean side up. Bake ½ hour. Turn off oven and let meat sit in oven another ½ hour. Drain, saving drippings.
Refrigerate overnight. Slice thin.
Sauce:
Place sliced meat in deep pan, pour “sauce” over meat and cover. Bake at 300̊ for 1½ to 2 hours
