Ingredients
- Olive Spread:
- 1 Loaf of Italian bread
- salami, ham, and provolone as desired
- 2/3 cup green olives, pitted, chopped
- 2/3 cup black olives, pitted, chopped
- 1/4 cup pimiento, chopped
- 1/4 cup green onions, chopped
- 3 cloves garlic, minced
- 1 fillet anchovy, mashed
- 1 tablespoon capers
- 1/3 cup parsley, finely chopped
- 1 teaspoon oregano
- 1/4 teaspoon cracked black pepper, ground
- 1/2 cups extra virgin olive oil
- 1 tablespoon red wine vinegar
Preparation
Step 1
In a sealable mixing bowl, mix olive spread ingredients together, seal and marinate overnight.
Slice a loaf of Italian bread in half horizontally and scoop out the insides. Layer salami, ham, and cheese like provolone. Spread olive spread thickly. Replace top half of loaf and cut into serving pieces.
When it's time to serve, pile on the spinach and grated veggies. Knock it outta the park with leafy nutrition and ENJOY!
