Porcupine Meat Balls

Ingredients

  • 1 1/2 lbs ground beef chuck
  • 1/2 cup uncooked converted rice
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 TBSP minced yellow onion
  • 1 10 1/2 oz can condensed tomato soup
  • 1 soup can water

Preparation

Step 1

Using hands, mix beef, rice, salt, pepper, and onion well and shape into 1 inch balls.

Mix tomato soup and water in a med heavy skillet and bring to simmering over moderate heat.

Add meatballs, adjust heat so mixture bubbles very gently, cover and simmer 1 hour. Serve with mashed potatoes.
