Ingredients
- 3 egg yolks
- 2 whole eggs
- 1/2 C. sugar
- 1 tsp. vanilla extract
- 1/2 tsp. almond extract
- 1/2 C. grated fresh coconut
- 1 1/3 C. milk
- 1 1 /3 C. heavy cream
Preparation
Step 1
1. Preheat oven to 350°F. Boil water.
2. Beat together egg yolks, eggs and sugar until slightly thickened. Stir in vanilla extract, almond extract and grated fresh coconut.
3. Scald together milk and heavy cream. Pour slowly into the egg mixture, stirring constantly. Ladle into 8 ramekins. Place the ramekins in a baking pan with two layers of paper towels underneath and add boiling water to 2/3 up the ramekins.
4. Bake for 30-35 minutes. A knife inserted in custard should come out clean. Serve warm or at room temperature.
