Ingredients

  • MEATBALLS:

  • ∙ 2/3 cup evaporated milk

  • ∙ 1 1/2 pound ground beef

  • ∙ 2/3 cup cracker crumbs

  • ∙ 1/2 cup chopped onions

  • ∙ 1 teaspoon salt

  • SAUCE:

  • ∙ 1 13 1/2 ounce can pineapple chunks

  • ∙ 2 tablespoons corn starch

  • ∙ 1/4 cup vinegar

  • ∙ 2 tablespoons soy sauce

  • ∙ 1 cup chopped green pepper

  • ∙ 1/4 cup brown sugar

Directions

Combine meatball ingredients and make balls. Grease a large pan and put balls in oven at 375* until done, about 20 - 30 minutes. (Stir while baking) For sauce, drain and reserve pineapple juice. Add water to pineapple syrup to make 1 cup or double the amount of juice with water. Mix cornstarch with vinegar, soy sauce and brown sugar. Place in saucepan and heat, beating until thickened and clear. TO FINISH: Drain meatballs, add sauce, pineapple chunks and green pepper. Either simmer, covered for at least 15 minutes or place in crock pot and keep on low heat. (This recipe will pretty much fill a crock pot.)
