Ingredients
- 3 C flour
- 2 C sugar
- 1 tsp salt
- 1 tsp baking soda
- 3 tsp ground cinnamon
- 1 1/4 C cooking oil
- 4 eggs, beaten
- 2 C canned pumpkin, NOT pumpkin pie mix
- 1/2 C chopped walnuts or pecans
- confectioner's sugar

Step 1
Preheat oven to 350*. Grease and flour two 9x5x3 in loaf pans. Place flour, sugar, salt, baking soda and cinnamon in a large mixing bowl and stir to blend. Add oil, eggs and pumpkin, mix well. Mix in nuts if desired. Pour into prepared pans and bake for one hour or until a toothpick inserted into the center of the loaves comes out clean. Remove from oven and cool in pans for 10 minutes. Remove from pans and transfer to a wire rack to cool completely. When cool, sprinkle with confectioner's sugar.
