Loin Lamb Chop with Mint Pesto

Description The mint pesto that accompanies these lamb chops is so much healthier than the sugary mint jelly that's often served. Because loin lamb chops are lean and tiny, you'll want two for each serving. They're delicious served with steamed broccoli, Brussels sprouts, or another dark green vegetable.
