Noodles with Peanut Sauce

Ingredients
- Optional:
- 8 ounces udon noodles (okay to substitute spaghetti or angel hair pasta)
- 1/2 cup chicken broth
- 1 tablespoon minced fresh ginger root or 1/2 teaspoon ground ginger
- 3 tablespoons soy sauce
- 4 tablespoons peanut butter (smooth or chunky)
- 3 tablespoons honey
- 1-2 teaspoons hot chili paste (less, or omit according to taste)
- 3 cloves garlic, minced
- 1/2 cup half-and-half
- 1/4 cup chopped green onions
- 1/4 cup chopped peanuts
- 1 pound skinless, boneless chicken breast halves, cut into cubes
- 1 tablespoon olive oil

Preparation
Step 1
Cook noodles or pasta in large pot of salted boiling water until al dente.
Drain.
If adding, chicken, sauté chicken in olive oil while noodles are cooking.
In a medium saucepan combine broth, ginger, soy sauce, peanut butter, honey, chili paste (as desired) and garlic.
Cook over medium heat until peanut butter melts and the mixture is fully incorporated and heated through.
Stir in half and half.
Add noodles and sautéed chicken and toss to coat.
Garnish with green onions and peanuts.
