Ingredients

  • 4 chicken cutlets
  • 1/2 tsp. sea salr
  • 1/4 tsp. pepper
  • 2 Tbls. olive oil
  • 1/4 cup white wine
  • 1 bag fresh baby spinach (5-6 oz.)
  • 1 cup sliced mushrooms
  • 1 (14.5 oz.) can diced tomatoes w/Basil, Garlic, oregano undrained
  • 4 ounces mozzarella

Preparation

Step 1

preheat lge. saute pan on med high for 2-3 minutes. Season both sides of chix with salt and pepper
Place oil in pan; swirl to coat. Arrange chix in pan; cook 2-4 minutes on one side or until lightly browned
Turn chix and add remaining ingredients to pan except cheese. Cover. Cook 4-5 minutes or until internal temp of chix reaches 165/
Remove pan from heat. Top chix with cheese, cover until cheese melts
