Ingredients

  • 1 lb chicken bones
  • 1 large onion, chopped
  • 2 bay leaves
  • 6 peppercorns
  • 1 carrot chopped
  • 1 celery stick with leaves, chopped
  • 1 -1.25 litres of water

Preparation

Step 1

Preheat oven to 350 F, place chicken bones and onion in baking dish, bake 50 mins or until well browned.

Transfer to stock pot

Make bouquet garni out of herbs

Add bouquet and other ingredients to pot, bring to a boil. Reduce heat to simmer 40 mins, adding more water if necessary.

Strain, cool quickly, fridge, scrape off fat.
