Ingredients
- 24 six-inch tortillas
- 1 1/2 cup finely diced cooked chicken
- 3 tablespoon butter
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1 cup chicken broth
- 1 tablespoon snipped parsley
- 1 tablespoon lemon juice
- 1 tablespoon grated onion
- dash paprika
- dash ground nutmeg
- dash pepper
- fat for deep frying
- grated cheese to add to chicken mixture when placed in tortilla prior to frying

Step 1
Wrap tortillas tightly in foil, heat in 350F oven 20 minutes
In sauce pan, melt butter; blend in flour & salt. Add chicken broth, cook & stir until mixture thickens.
Add parsley, lemon juice, onion, paprika, nutmeg & pepper. Stir in chicken, cool slightly.
Place 1 tablespoon chicken mixture on each tortilla. Roll up very tightly, securing w/ wooden toothpicks. Fry in deep hot fat (350F) for 1-2 min.
Garnish w/ guacamole.
