Ingredients
- 5 large tomatoes, peeled and chopped
- 1 clove garlic, minced
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 large cucumber, peeled, seeded and diced
- 1 ripe avocado, diced
- 1/4 cup red or sweet onion, finely chopped
- 1 cup vegetable broth
- 1/4 cup lime juice
- 1 can (12 oz.) tomato juice
- 1 tbsp. Worcestershire sauce
- 2 sticks celery, minced
- 5 tsp. fresh cilantro leaves, finely chopped
- 1 tsp. fresh oregano
- Salt and pepper, to taste
- 1/2 cup red bell pepper
- 1 jalapeño, finely chopped with seeds remove
Preparation
Step 1
1. Put aside 3/4 cup of the avocado. Partly purée all the other ingredients in a food processor or blender (a hand blender works best).
2. Once puréed, refrigerate the gazpacho for at least 3 hours.
3. When ready to serve, garnish with diced avocado and chopped cilantro.
