Cool Gazpacho Soup

Ingredients

  • 5 large tomatoes, peeled and chopped
  • 1 clove garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 large cucumber, peeled, seeded and diced
  • 1 ripe avocado, diced
  • 1/4 cup red or sweet onion, finely chopped
  • 1 cup vegetable broth
  • 1/4 cup lime juice
  • 1 can (12 oz.) tomato juice
  • 1 tbsp. Worcestershire sauce
  • 2 sticks celery, minced
  • 5 tsp. fresh cilantro leaves, finely chopped
  • 1 tsp. fresh oregano
  • Salt and pepper, to taste
  • 1/2 cup red bell pepper
  • 1 jalapeño, finely chopped with seeds remove

Preparation

Step 1

1. Put aside 3/4 cup of the avocado. Partly purée all the other ingredients in a food processor or blender (a hand blender works best).
2. Once puréed, refrigerate the gazpacho for at least 3 hours.
3. When ready to serve, garnish with diced avocado and chopped cilantro.
