Salmon with a crispy crust & a wine sauce

Ingredients
- Sauce:
- 2 T oil oil
- 4-3 inch salmon fillets
- Truffle salt
- 1 T unsalted butter
- 2 teas flour
- 1 c dry white wine
- 1 T chopped fresh chives

Preparation
Step 1
Heat oil and put in salmon fillets. Fry until you can see bottom is very crispy, not burned. You will see the salmon start to turn pink from the red color. When almost done quickly turn over on the other side for about 3 seconds and remove from pan. Sprinkle truffle salt on to taste or salt and pepper.
Sauce:
Melt butter over medium heat. Add flour whisking 1 minute. Add wine and bring to a boil. Simmer until liquid is reduced by half about 8 to l0 minutes. Spoon over salmon. Sprinkle chives over this.
