Crab Cakes: Judy Burke's Recipe

Excellent crab cakes. Use best lump crab you can find. BE CAREFUL when preparing, NOT to break the lumps. Recipe can be made into 8 medium/small cakes: two per person or 6-7 large ones.

Ingredients

  • 1 pound fresh lump crab meat--jumbo lumps or the best you can buy
  • 2 T. mayo
  • 1 egg
  • 1 T worcestershire sauce
  • few dashes Old Bay
  • 1 T dry mustard (or regular yellow)
  • 2-3 T. chopped fresh parsley
  • 12 Saltines that have been crushed (in plastic baggie) until fine: use saltines for best flavor and texture.

Step 1

Mix all together very gently.

Make them in morning and put in refrig; they hold together better if made ahead of time. Broil or fry in a little veg. oil until golden brown.
