Grilled chicken breast with salsa

Ingredients

  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 2 tsp minced garlic
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 (4-oz) boneless, skinless chicken breast halves
  • 1 avocado, diced
  • 1 Tbsp lime juice
  • 1 tomato, diced
  • 2 Tbsp chopped cilantro

Step 1

1. Preheat grill and coat lightly with cooking spray
2. Mix oil, lemon juice, garlic, salt, and pepper in a bowl. Add chicken and coat with marinade. Cover and refrigerate for 15 minutes, turning once.
3. Remove chicken from bowl; discard marinade. Grill on medium, covered, for 6 to 8 minutes, turning once, or until cooked through. Let rest for 3 minutes.
4. Meanwhile, toss avocado in a bowl with lime juice. Add tomato and cilantro.
5. Cut each breast into 1/2 inch thick slices on diagonal. Divide between 2 plates. Top with salsa and garnish with extra cilantro.
