Strawberry Fantasia

Ingredients

  • Meringue:
  • 6 eggs whites
  • 1/2 tsp cream of tartar
  • 1/4 tsp salt
  • 1 3/4 cups sugar
  • Filling:
  • 6 oz cream cheese
  • 3/4 to 1 cup sugar
  • 1 tsp vanilla
  • 2 cups whipping cream, whipped
  • 2 cups marshmallows
  • Topping:
  • 2 cups strawberries
  • 1 tsp lemon juice

Preparation

Step 1

Meringue:
Beat egg whites, tartar, and salt until foamy. Gradually add sugar and beat until stiff peaks form. Pour into 9x13 dish. Bake at 275 degrees for 1 hour. Leave in oven overnight!
Filling:
Cream together cream cheese, sugar, and vanilla. Fold in whipped cream and marshmallows. Spread over meringue. Chill overnight.
Topping:
Mix strawberries with lemon juice. Place over filling on day of serving.
