French beans ( Ina Garten)

Ingredients
- 14 ounces dried Great Northern Beans
- 1 quart chicken stock
- 1 TBS salt
- 1/4 cup olive oil
- 2 cups chopped yellow onions (2 onions)
- 1 cup medium diced carrots (2 carrots)
- 1 cup medium diced celery (2 stalks)
- 1/4 cup fresh chopped parsley
- 2 TBS mineced fresh rosemary
- 2 TBS minced fresh thyme
- 1 TBS minced garlic (3 cloves)
- 1/3 cup freshly grated Parmesan cheese

Preparation
Step 1
soak beans overnight, drain and place in a large sauce pan with chicken stock and bring to a boil; the simmer for 20 to 30 minutes; add salt and resume simmering for 10 minutes.
Drain beans reserving stock.
In a large saute pan, heat olive oil then add onions diced carrots and celery over low heat for 10 minutes.
Add parsley, garlic, rosemary and thyme and cook for about 1 minute.
Add beans and 2 cups of stock (or water to make up to 2 cups)
cook for 15 minutes
Finish withe Parmesan cheese and a garnish of parsley
