Ingredients
- 125 g butter, melted
- 2 t finely grated lemon rind
- 1 1/2 c caster sugar
- 3 eggs, separated
- 1/2 c self rising flour
- 1/3 c lemon juice
- 1 1/2 c milk

Preheat oven to 180 (160 fan forced). Grease 6 1 cup oven proof dishes, place in a large baking dish.
Combine butter, rind, sugar and egg yolks in a large bowl. Whisk in sifted flour, then juice. Gradually whisk in milk-the mixture should be smooth and runny.
Beat the egg whites to soft peaks and fold into lemon mixture in two batches.
Divide lemon mixture among dishes. Add enough boiling water to the baking dish to come halfway up the sides of the dishes. Bake for about 30 minutes or until puddings have risen and are a light golden.
