JANE K.'S SHRIMP PUFFS
- 7 1/2oz can refrigerated buttermilk biscuits
- 1 cup Monterey Jack cheese, grated
- 1 scallion, minced
- 1/2 cup mayo
- 1/2 tsp minced garlic
- 1/2 lb chopped shrimp
- Old Bay Seasoning
- Fresh parsley to garnish
Split each biscuit in half & place a piece in the well of a lightly sprayed mini muffin tin.
Press the biscuit into the bottom & up the sides.
Mix all the other ingredients tog, seasoning to taste with Old Bay & keeping parsley for garnish.
Place 1Tblsp. on each biscuit.
Bake in a preheated 350' oven for 20 mins.
Let cool slightly then remove to a serving platter & garnish with parsley. (I found a small spoon helped get them out without burning my fingers)
If doubling only need 1 &1/2 times the filling.
