Ingredients

  • Sweet potatoes
  • Goat cheese
  • Spicy black beans (see below)
  • Cilantro

Preparation

Step 1

Preheat oven to 400. Slice unpeeled sweet potatos 1/2 inch thick, and place in a single layer on a lightly oiled baking sheet. Roast until browned on bottoms, 30-35 minutes.

Top with spicy black beans (I used canned, rinsed them and added chipotle pepper); crumbled goat cheese, and cilantro leaves. You can also use other cheeses and chutneys, salsas, or pesto.
